Domaine Saint Vincent Cuvée Saint Pierre2021 – Vinsobres

(Barrel-aged Syrah) The wine has a ruby color of medium intensity. The nose offers a lot of gourmandise, juiciness, even sweetness of ripe fruit. We find notes of crushed morello cherry, red chocolate cherry, red cherry jam, blackberry, wild strawberry, ripe black plum, chocolate prunes in the background, as well as dried blackcurrant, associated with savoury spiciness, gour;and hint of torrefaction as well as herbaceous aromas. There are notes of clove, liquorice (with a touch of star anise), ground cumin and nutmeg, as well as dark chocolate with mint, coffee and toasted bitter almond. There are also Mediterranean herbs, dried violet and eucalyptus. The mouth is silky, velvety and enveloping. The tannins have a very fine grain, but a tight structure, as well as volume and a certain power. The flavors are fleshy and sweet, with a noticeable flavor of chocolate. We find in particular the flavors of juicy morello cherry, chocolate morello cherry, wild strawberry, dark chocolate plum, blackberry, as well as roasted bouquet garni, dried bay leaf and eucalyptus, dried violet, liquorice, ground cumin and nutmeg. Notes of torrefaction (toasted almond, coffee) appear in the finish. Good persistence with lots of flavors, delicate bitterness and a good level of acidity.
