Domaine Rolet – Crémant du Jura Blanc de Noirs 2018-12%

This crémant has a beautiful mousse with rapid bubbles. It has a pale straw yellow color, limpid and shiny. The nose is fresh with a nice intensity. We have notes of fruit like fresh green apple but also white grape and juicy white peach. We perceive a minerality with a smoky appearance. When aerated, we perceive the same aromas. The palate is fresh with a nice effervescence. We have notes of apple and a mineral side. We perceive a slight bitterness which accompanies the lime zest. There are touches of white peach and white grapes in the mid-palate with a discreet hint of petroleum. The finish is pure, with salivating acidity.
