Domaine du Gypse 2023 – Gigondas

The wine has a deep ruby color. The nose offers concentration, a certain depth and a rich fruity substance. It expresses the aromas of blackberry, morello cherry, black plum, roasted red cherry, wild strawberry and a hint of blackcurrant, associated with a touch of liquorice (even a hint of menthol in the background), cocoa, coffee and toast, as well as a mineral touch (dry stone), aromatic herbs and violet. The palate is warm, with generous fruitiness and a slight touch of kirsch in the background. The attack expresses notes of ripe fruit (crushed strawberry, morello cherry, roasted red cherry, a hint of crème de cassis and black plum), associated with notes of liquorice, toasted wood, chocolate prunes, herbs. roasted aromatic herbs and liquorice. The finish expresses good acidity, which balances the alcohol level, as well as gourmet chocolate notes (morello cherry in chocolate, prunes in chocolate) as well as good bitterness.
