The crémant has a nice foam and rapid bubbles. The color is pale straw yellow. The nose is fresh, intense and fruity with notes of apple but also the presence of minerality. We have a light smoky, toasty feel. With air, we find the fruit but also a touch of white pepper as well as a little umami. In the mouth, it is fresh with a controlled and pleasant effervescence. We have fresh fruit with the apple but also dried fruit with the almond. We have a nice acidity and a slight astringency which brings volume. This acidity reflects touches of lemon. We still have a little umami and the finish ends with lemon blossom and almond. This finale is relatively long.
