The wine has a pale lemon yellow color. The nose is subtle and delicate at first, but we sense complexity and tension. The first nose is fresh, tangy and herbaceous: we find notes of green apple pulp, fresh quince, fresh fennel, crushed wild mint, rosemary in syrup, as well as fresh Mediterranean herbs. The second nose reveals the gour;andise of juicy stone fruits (crushed yellow peach, ripe apricot, yellow plum, mirabelle plum), aged in wood (fresh vanilla, a hint of cardamom, fresh wood, toasted hazelnut), as well as white flowers (linden, acacia), honey, wax in the background and infused white tea. The palate is fresh and airy, but at the same time juicy, filling and concentrated. It expresses the flavors of juicy yellow peach, crushed apricot, Mirabelle plum, candied lemon peel, combined with fragrant toasted and spicy notes (roasted hazelnut, roasted bitter almond, fennel seeds, vanilla, cardamom, even star anise), which return in retroolfaction. The mid-palate offers fresh volume and tension – we also find notes of stone fruit, associated with flavors of fresh fennel, quince, green apple pulp and green pear, as well as a touch minty. The finish is persistent, fruity and delicious, with a slight bitterness of candied lime and a salivating acidity. A complex wine, with great elegance, dynamism and freshness.
