Domaine de Pignan 2021 – Châteauneuf-du-Pape

The wine has a ruby color of medium intensity. The nose is very aromatic, very fragrant and complex. It offers an expressive spiciness, as well as warm notes of slightly roasted herbs. There are pronounced notes of cloves, ground cumin, roasted coriander, fresh liquorice, white pepper, roasted bouquet garni (thyme, roasted rosemary, dried bay leaf), oregano, dried mint. , as well as wild flowers, cornflowers and scrubland herbs. The fruity notes on the nose are juicy and ripe: the wine offers in particular notes of sweet wild strawberry, morello cherry, macerated cherry, red plum, blueberry jam, crushed strawberry, associated with subtle touches of torrefaction (coffee, toasted, a touch of roast meat). On the palate, the wine is silky, supple, generous and open. It expresses pronounced notes of sweet spices (clove, nutmeg, liquorice stick, a touch of dried vanilla), dried herbs (oregano, thyme, rosemary, bay leaf), garrigue, wild flowers, cornflower, as well as a mineral touch (warm stone, dry gravel). The fruity substance is ripe, rich and enveloping. We find notes of sweet, but not overripe, red fruits (fresh wood, crushed strawberries, fresh morello cherries, wild blackberries), macerated red cherries, blueberry jam and crème de cassis. The finish is long and savoury: on sweet spices, a touch of chocolate and notes of ripe morello cherry, combined with a touch of vanilla and torrefaction (mild coffee, toasted bread). The tannins are very fine and delicate. The acidity is supple and well balanced with the profile of the wine. A wine of great complexity and generosity, well balanced and with excellent aging potential.
