The palate is dense and airy at the same time, but rather tight, even firm. It expresses notes of juicy ripe fruits (morello cherry, cassis, black plum, strawberry, roasted raspberry, bigarreau cherry), complemented by the bitterness and tannic side of bird cherry, a touch of chocolate morello cherry, mint chocolate and the tanginess of cocoa nibs. Notes of fresh mint, mint chocolate, liquorice, cardamom and cumin bring freshness and a delicate spicy touch. The tannins are finely tight, well constructed. Beautiful acidity, sapidity on the persistence and gourmandise (toasted hazelnut, dark chocolate). Elegance and delicacy.
