(organic) The wine has a ruby color of medium intensity. The nose is fleshy and gourmand, very fruity, with pronounced herbaceous and menthol aromas which bring freshness. We find notes of morello cherry, wild strawberry, red cherry, crushed raspberry, quetchese plum, as well as liquorice, fresh peppermint and menthol, associated with notes of nutmeg, Mediterranean herbs (rosemary fresh thyme, bay leaf, garrigue), with a distinguished minerality (dry stone, a very slight salinity) and a fine floral bouquet (a touch of violet and cornflower). The palate offers tension and precision, lots of fruit, savoury spicy and herbaceous notes, as well as touches of torrefaction. It expresses notes of red cherry, morello cherry, strawberry, raspberry coulis, quetsche plum, dried black plum, as well as toasted, slightly smoked touches of coffee, aromatic herbs (dried thyme, dried rosemary, garrigue, dried mint). At the end of the palate, we feel a gourmand touch of chocolate (morello cherry in chocolate, prunes in chocolate, bitterness of dark chocolate), sweet spices (liquorice, cumin, nutmeg), a hint of slightly earthy minerality and notes of dried flowers (dried cornflower). The acidity is lively, fresh and balances the warming touch of the alcohol. The finish is persistent, with notes of dried herbs. Complexity and power.
