(organic) The wine has a pale lemon yellow color. The nose is aromatic and expressive, with notes captivating and fragrant of Mediterranean herbs (garrigue, fresh thyme, rosemary), which are prolonged by a racy minerality and precise notes of limestone and salty sea breeze. We then find touches of chamomile, linden, wildflower honey, as well as grapefruit, dried lemon zest and yellow lemon, as well as tangy green apple. The palate offers density and freshness, a mineral (limestone, saline) and slightly bitter (grapefruit) attack. On the mid-palate, notes of gourmet fruits appear (yellow peach, apricot), refreshed by a hint of ripe lemon and blood orange. There is also a slight honeyed and floral hint (chamomile, acacia). The finish is persistent, round and luscious, but fresh, with good acidity, a bitter touch of grapefruit as well as the delicacy of crushed stone fruits and honey.
