Domaine Cassagne & Vitailles – Combarels 2021 – IGP Pays d’Oc

The wine has a pale lemon-yellow color. The nose is delicate and refined: it offers the freshness of citrus, sweetness of stone fruit and a subtle floral bouquet. It expresses notes of ripe lemon, candied lemon zest, grapefruit jam, a slight touch of orange zest, as well as aromas of crisp white peach, yellow melon, ripe green apple and green pear, combined with floral touches of apple blossom, acacia and lily. There is also a very subtle spiciness in the background (pepper and clove notes) and a toasted touch that appears after aeration. On the palate, the wine offers roundness, smoothness of ripe fruit and at the same time – freshness and lively acidity. It expresses the flavors of ripe yellow lemon, fresh lemon peel, white peach, yellow melon, apple blossom, acacia, white currants, crunchy apricot as well as subtle spicy touches (clove, a hint of vanilla), toast and a saline note on the finish. The finish is persistent, tasty, unctuous and fresh at the same time. A complex, balanced and elegant wine.
