The mousse is deep and there are lots of fast bubbles. The strings are well designed and are going to the center of the glass. The Champagne is shiny, limpid with an intense gold color. The first nose is intense with cooked tomatoes but also mature flowers and custard cream. The second nose confirms these bright aromas with vanilla, cooked caramelised apple and sandalwood flavors. It’s complex. Very nice done with a good persistent acidity. The attack is upfront, the bubbles are well-balances : present and soft. There is still a nice freshness. We can find the vanilla, buttery, creamy feeling with sandalwood notes. The roasted almond appears. The middle of the mouth is dynamic with a nice long finish. There is umami at the end, it’s savory. We also have flowers like gardenia, light soy sauce, plum and cooked apple.
