Clos Saint Sebastien – Inspiration Minérale 2023, Coume del Mas – AOP Collioure

The nose is elegant, airy, ample and powerful and offers precision and deepness. We find notes of quince, mirabelle plum and small notes of physalis associated with touches of small creamy yellow fruits as well as fine, almost beeswax hints, a discreet hint of sage, an imperceptible hint of olive tree and discreet hints of butter (in the background). The palate is well-built, supple, elegant and airy and offers delicacy, precision and depth. It presents a tangy frame and energy. In mouth this wine expresses notes of juicy/pulpy physalis, acidulous mirabelle plum and small notes of quince associated with touches of bright yellow berries as well as fine hints of sage and a discreet hint of almost local grove. There’s also a saline/marine side as well as a discreet hint of toasty oak. Good length and definition. Acidulous wine and offers persistence, juicy, saline and offers chewy/crushed almond and a discreet hint of almost verbena in the background/persistence. Nicely saline.
