Clos Saint Sebastien, Inspiration Célecte, Escoumes 2021 – Collioure

The wine has a ruby color of medium intensity. The nose offers ripe fresh fruit (morello cherry, crushed red currant, wild strawberry, black plum, red plum jam), associated with notes of torrefaction (smoke, coffee, toasted almond, cocoa), sweet spices (licorice, coriander, nutmeg), herbs (bay leaf, fresh, dried bouquet garni, dried mint) and wild rose. The mouth offers accuracy, power and precision. The tannins have a fine grain, sapidity and a powdery cocoa note, but are rather dry. The fruity texture on the palate is generous, enveloping and fresh. We find notes of black plum, morello cherry, strawberry, crushed raspberry and cassis, associated with touches of menthol, fresh bouquet garni, dark chocolate, toasted almond, dried wild rose and garrigue, as well as a spicy side which appears at the end of the palate on the persistence (liquorice, roasted coriander seeds, nutmeg). The finish offers texture, volume and a good level of acidity which balances the power and dryness of the tannins.
