Clos Saint Sebastien, empreintes 2023 – Coullioure

The wine has a ruby color of medium intensity. The nose is gourmand and expresses notes of fleshy fruits (wooden strawberries, juicy black plums and red plums), combined with a fresh touch of tangy fruits (blackcurrant, morello cherry) and aromatic herbs (dried mint, garrigue, fresh Mediterranean herbs – thyme, rosemary, bay leaf), as well as a hint of wild rose and a delicate minerality (salinity in the background). The palate offers beautiful concentration, freshness, juiciness and an airiness. The attack is purely fruity (we find notes of crushed raspberry, wild strawberry, black plum, morello cherry and red plum jam). The flavors complement each other in the mid-palate with gourmet notes of cocoa, toasted (in the background), fresh Mediterranean herbs (thyme, rosemary, bay leaf, sage) and roasted bouquet garni. The finish is sapid, gourmand, even slightly sweet (we find in particular the flavors of morello cherry in chocolate and red cherry jam), with a good level of acidity and a touch of garrigue which refreshes the jamminess of the palate. Good persistence, the tannins are powerful, grippy but with a fine grain.
