(organic) The first nose expresses earthy mineral notes and dry stone, associated with aromas of roasted yellow apple, yellow pear, hay, flower honey, candied quince in the background, as well as dried lemon, grapefruit and ripe peach in the background. After aeration, we find fresh notes of green apple, cucumber and cut grass, as well as tangy apricot. The palate is textured, delicious and enveloping, with earthy and mineral notes that are slightly dry on attack, but softened by the rounded flavors of honey, ripe peach and roasted yellow apple. The mid-palate is very fragrant, we find sweet notes of yellow pear, candied lemon, juicy yellow peach and candied pineapple (in the background), associated with a fragrant floral bouquet – dried linden, acacia, apple blossom and orange blossom. The finish is aromatic, persistent and gourmet, with a touch of dry tannin and notes of green apple skin, dried white flowers, wax and honey. Beautiful complexity and persistence, with salivating acidity and good bitterness on the finish (bitter orange, even bitter almond). Quite atypical.
