The nose offers density in freshness, depth, juiciness and fresh ripe and tangy fruits (morello
cherry, bigarreau, raspberry, blackcurrant, a slight hint of bird cherry, wild blackberry and
redcurrant, even with a touch of redcurrant jelly), complemented by spicy and fresh woody
notes (liquorice, cardamom, hint of green anise and fresh vanilla), as well as fresh wood,
bark and pine sap, gourmet chocolate hints, elegant and fresh (morello cherry in chocolate,
bitter chocolate, cocoa nibs with a touch of tangy), a perfumed floral bouquet (violet, wild
rose, lily, peony in the background), accuracy, precision and straightness on the nose. The
palate is also very accurate, with straightness, but more closed and solid, even tight, without
being drying. Tannins are firm, slightly grippy, but with a fine grain. We find the fruity flavors on the attack (morello cherry, blackcurrant, blueberry, bigarreau cherry and the tannic side of bird cherry, in the middle of the mouth – the delicate and refined woody and spicy side appears (fresh menthol, pine sap, liquorice, star anise), completed by a perfumed floral bouquet (violet, peony, wild rose in the background). Good bitterness and tanginess of cocoa nibs and dark chocolate, the finish is very persistent. Lots of freshness, precision, harmony and solidity. Good potential.
