(Cabernet Sauvignon Merlot): The wine has a deep ruby color. The nose is spicy and savory, with subtle notes of roasted meat and smoke in the background that disappear after aeration. It expresses notes of juicy morello cherry, wild blackberry, black plum (in the background), red cherry jam, wild strawberry and elderberry, accompanied by elegant floral notes (violet, fresh cornflower, iris) as well as with a touch of sweet spices (vanilla, licorice, cloves, white pepper), dried mint, sweet coffee and bitter cocoa. On the palate, the attack is open, fruity and round: it expresses the flavors of strawberry, bigarreau cherry, morello cherry, blackcurrant, blueberry, which combine with spicy notes of white pepper, licorice and cloves. The tannins are a bit grainy, but integrated thanks to a salivating acidity which brings liveliness to the finish. Good persistence on the fresh flavors of dried mint and violet, with a delicate bitterness of bitter cocoa in the background. Good balance overall and good structure.
