The wine is carbonated at this stage. The nose expresses warm notes of roasted red plum, roasted red cherry, crushed blackcurrant and blackberry, combined with notes of chocolate cherry, mint chocolate, liquorice and peony (even fresh rose). A very slight vanilla and caramelized note appears after aeration. The palate offers juiciness, gourmandise and freshness (without the roasted hint that we have on the nose), with a herbaceous touch in the background (peppermint, blackcurrant leaf) and a tannic hint of wild black plum. It also expresses flavors of morello cherry, blackcurrant, chocolate with mint, liquorice and black pepper, as well as a good bitterness. The tannins have a fine grain, but dry on the finish. The acidity is lively and salivating, the finish is fruity and juicy, which helps balance the tannic structure.
