(organic) The wine has a lemon yellow color of medium intensity. The nose is airy, floral and refined. The first nose expresses gourmet notes of vanilla, butter and warm brioche, associated with refined scents of acacia, apple blossom, honeysuckle, as well as a tanginess and roundness of candied lemon and lemon curd. We also find notes of yellow peach, juicy apricot, lemon zest, quince, honey and hay in the background. The palate is expressive and tasty, with a slightly more woody attack than the nose (in addition to vanilla and brioche, we perceive notes of toasted wood, toasted hazelnut and sweet almond in the background). In the mid-palate, we find notes of ripe yellow peach, apricot, lime blossom, honeysuckle, a hint of hay, butter, fresh lemon and candied lemon. The texture on the palate is oily and voluminous, but refined and not heavy. The finish is persistent, tangy and slightly bitter (grapefruit), with notes of toasted wood which appear at the very end of the palate. A complex wine, with volume, lively acidity and structure, which needs time to open up.
