Château de Mersault « Les Chaillots » 2020 – Ladoix

The wine has a ruby color of medium intensity. The nose offers depth, juiciness and a silky touch. It expresses notes of ripe morello cherry, red cherry juice, wild strawberry, raspberry coulis, associated with delicate notes of wild mint, fresh tobacco, rosemary, as well as flowers (dried rose, peony in background) and sweet spices (nutmeg, liquorice, white pepper) and a fine hint of torrefaction in the background (toasted hazelnut, cocoa). The palate is supple, round, very juicy and gourmand, with a fine chocolatey hint. It expresses notes of very ripe morello cherry, crushed red plum, raspberry coulis, wild strawberry, redcurrant jelly, associated with notes of chocolate cherry, cocoa, a spicy touch (liquorice, vanilla in background, clove), as well as a hint of aromatic herbs (roasted bouquet garni), torrefaction (toasted hazelnut) and flowers (dried rose, peony). The tannins are generous, but very supple and fine. The finish is long, fruity and gourmand: with notes of cherry in chocolate, balanced by a lovely bitterness and refreshing acidity.
