The nose is aromatic, spicy with a certain concentration and a discreetly tight grain. There are notes of quince, pulpy yellow berries and more slightly of zest associated with a touch of lemon caviar as well as fermentation hints, spices, fine hints of white pepper, salinity, a discreet note of lime blossom and walnut vinegar. The palate is fruity and offers freshness and a nice definition. There is a certain gourmandize, a little fat, roundness, a fine unctuosity as well as tension. The notes of quince, juicy / tangy lemon and more slightly zest associated with a touch of lemon caviar and mesocarp are present. There are fine hints of tangy pineapple, spices, beeswax along with a subtle fermentation hint, walnut vinegar, toasted almond and a subtle dusty hint. Good length. We can taste a discreet tannic side on the finish, both in terms of aroma and structure. An imperceptible hint of fresh verbena concludes the tasting. Persistent on acidity.
