The wine has a pale lemon color. The nose is straight, racy and mineral. On the first nose, we find limestone and salty notes, accompanied by a touch of honey, dried flowers (lime blossom, dried chamomile, acacia) and a tangy side of lemon zest and grapefruit. After aeration, we find notes of crunchy apricot, white peach, thyme flower, fresh hazelnut, a hint of fresh wood (even sap) and roasted apricot with thyme, as well as a touch lactic of butter and yogurt, nutmeg and vanilla in the background. The palate expresses honeyed and woody notes on attack: toasted notes, fresh hazelnut, acacia honey, nutmeg, a hint of vanilla. The mid-palate is chiseled, mineral, slightly saline and chalky. There are also notes of hay, dried linden and chamomile, dried lemon peel, grapefruit, tangy apricot, white peach and apricot roasted with thyme and honey. The finish is persistent, fresh, with lively acidity and a touch of grapefruit bitterness, combined with a hint of honey which brings gourmandise. Harmony, accuracy and precision.
