(85% Pinot Meunier, 15% Pinot Noir) The champagne has a lemon yellow color of medium intensity, even with light golden highlights, and fine and regular bubbles. The nose is intense, but refined, with lots of fruit and juiciness at the opening. We first find the incisive aromas of ripe citrus fruits (yellow lemon, grapefruit with its bitterness), the tanginess of green apple, green plum in the background and apricot. After aeration, notes of white raspberry and pineapple strawberry, a lactic hint of lemon yogurt, as well as floral aromas of apple blossom, chamomile, complemented by notes of hay, toasted bread and toasted hazelnut in the background as well as dried chamomile. The palate has a straight, chiseled and tangy attack, on notes of citrus fruits (crushed yellow lemon, grapefruit), tangy green plum and green apple. In the mid-palate, we perceive a good bitterness, notes of hay, fresh and dried flowers (apple blossom, dried chamomile), as well as a hint of limestone minerality. Beautiful liveliness thanks to a chiseled but integrated acidity. The finish is expressive, concerted, even intense and persistent, on the notes of autolysis (fresh bread, yeast in the background) which add to the complexity of the wine.
