The color of this Champagne is shiny with a straw yellow color. The bubbles are dynamic, fine and rapid. The nose is aromatic, mineral, smoky with subtle notes of juicy apple as well as orange zest. We have thin slices of toast and brioche. The second nose is still on the same line with grapefruit, thyme flower as well as a tarte tatin and creamy side. The effervescence is lovely, the palate is fresh and tangy. We have notes of granny-smith apple as well as touches of pineapple. We have a beautiful definition of the grape variety with the addition of fine hints of white grapes which provide a slight astringency giving fullness. It is clear and straight with a toasted, buttery touch which rounds out the base of this Champagne. Everything is delicate, well integrated. The finish is on plum, browned butter and orange zest.
