The Champagne has a beautiful intense golden color with shine and fine bubbles. The nose is fresh, aromatic, intense on saffron, cooked apple and roasted almond. We also have hints of peach in syrup and juicy pomelo. Then it’s the fresh apple that appears with subtle hints of yeast and brioche. With aeration, the minerality is present with minty freshness and an interesting root aspect. The palate is fresh, intense with fruit such as apple, pear but also crushed blueberries. There are brioche notes and a salivating acidity in the mid-palate. The finish is subtle with hints of lime, walnuts and apple blossom.
