The color of this Champagne is shiny with a beautiful clear golden color and strings of dynamic bubbles. The nose is intense, charming with subtle notes of cooked apple, curry and toast. We perceive a beautiful freshness brought by touches of basil as well as pineapple mint. Yeast and bread crumbs compete with discreet notes of coconut. With air, there are citrus zests as well as hints of yellow peach and bread crust. Complex. The palate is fresh with tertiary notes of cooked apple, poached pear as well as citrus zest. There is a pastry side in the mid-palate, creamy with almond milk. The tasting is discreet. The acidity is very present, salivating with a touch of iodine and good bitterness. It’s mineral, straight and tasty. The finish is long, very beautiful and aromatic with notes of butter, freshly baked bread and apple reduction.
