The nose is tangy, precise, with a beautiful fruitiness and freshness, a fragrant floral bouquet and a delicate, but perceptible spiciness. It expresses notes of wild strawberry, fresh raspberry (with a touch of crushed raspberry), fresh red cherry, red apple, vine peach and blood orange, associated with aromas of wild rose, lilac , fresh peony and cherry blossom and grapefruit which appear in the second nose. We also find notes of nutmeg, a subtle hint of vanilla, toasted almond in the background and saffron. The palate offers a silky effervescence, an enveloping fruity volume, but with finesse, gourmandise and a slight vinous touch. It expresses the flavors of ripe red cherry, morello cherry, wild strawberry and crushed raspberry, combined with notes of vine peach, bitter orange and grapefruit, as well as peony, cherry blossom, wild rose, spices (nutmeg, a touch of vanilla), a lactic touch of cherry yogurt and a hint of toasted almond, which appears in the mid-palate and persists on the finish. The finish is very juicy and fruity, with a note of sweet wild strawberry, balanced by a tangy touch of bigarreaux cherry. Nice salivating acidity, combined with a delicate bitterness, gives the wine a good structure and complements the juiciness of the fruit. A refined and harmonious gastronomic champagne.
