This Champagne has a beautiful straw yellow color with dynamic bubbles. The nose is intense with a very nice mineral freshness. We perceive notes of apple, plum as well as an interesting salinity with a savory side close to a gourmet meat juice. With time, the plum in all its forms takes over: fresh plum, umeboshi, plum juice with tertiary notes reminiscent of almond and hazelnut. Freshness is also brought by fine hints of mint and rosemary. Aeration brings a round, brioche, sensitive side. The palate is fresh, tangy with an immediate bouquet of flowers: violet, rose, jasmine and especially lime blossom. This salivating acidity is reminiscent of Japanese umeboshi plum in the mid-palate with apple and crunchy pear. The tasting is pleasant, airy with a beautiful aromatic complexity of the fruits: apple, pear, quince, plum, persimmon. The finish has a hint of salt, it is fine with a vanilla note and always plum as a common thread as well as a hint of almond paste.
