There is a beautiful clear andshiny straw yellow color with dynamic bubbles. The nose is aromatic, powerful with notes of apple as well as almond, hazelnut and a fine hint of fresh walnut. With time, the nose opens up to reveal vanilla and fresh herbs. We perceive a discreet note of tea. The palate is fresh, direct and sensitive with a nice hint of bitterness. We have delicate spices like saffron and Madras curry. The tasting has a nice acidity which makes the whole thing airy with notes of plum, apple and quince. The mid-palate is more on vanilla and cream with a fair balance between dynamism and roundness. The finish is straight and long with an interesting, pretty pineapple note.
