This champagne has a beautiful straw yellow color. The nose is aromatic and delicate with notes of brioche as well as yeast. We perceive citrus fruits like orange as well as touches of apple and yellow peach. With time, the nose is more aromatic with a very umami flavorful hint and a nice minerality. We also have a freshness that emerges, brought by fresh herbs such as mint or basil. The palate is fresh, dynamic with a beautiful bubble. The minerality is present and a pleasant acidity which coats the palate. We find notes of apple and tangy pear, hints of roasted almond as well as plum and saffron on the finish. It is a complex champagne with a beautiful balance. Gastronomical.
