The wine has a salmon pink color, of medium intensity. The nose is refined, complex and elegant. The first nose offers pure tangy fruit: aromas of raspberry, bigarreaux cherry and cranberries. Aeration opens up the spicy and toasted nuances: we sense subtle aromas of toasted hazelnut, vanilla (in the background), cumin, even a very fine touch of liquorice and fresh mint, as well as flowers – fresh wild rose , dried rose. Then, we find notes of dried cherry, fresh crunch, vine peach and grapefruit. The palate is sapid, generous and expressive, but with finesse. The attack is very fruity and gourmand, with notes of vine peach, red apple and raspberry. In the mid-palate, we find morello cherry, sweet spices (a touch of vanilla and nutmeg) and toasted hazelnut. The finish is persistent and expresses floral notes (dried rose, a touch of peony) and citrus (orange zest, grapefruit). At the end of the palate, we also find the roundness of fleshy fruits, juiciness and sweetness, refreshed by a tangy touch and a bitterness of grapefruit. A vinous, enveloping, complex and gourmet champagne.
