Very nice mousse with medium sized bubbles. The strings of very fine bubbles are appearing little by little. The wine is limpide with a nice rose gold color. The first nose is aromatic with stone fruits aromas like peach and nectarine. We can also smell a slight touch of eucalyptus and candied citrus fruits like kumquat. With air, the wine has some flowers touch like peony with a fresh minerality. The attack is fresh and smooth. We feel the cooked apple and pear. There is a hint of sweet vanilla with stone cherry. The acidity is well done. The middle of the tasting is delicate. The bubbles leave a great palate with a lot of aromas. The finish has a hint of umami, savory. We can also feel quince paste and minerality which lingers.
