Bibiano 2021 – Chianti Classico

The wine has a pale ruby color. The nose is tangy at first, but after aeration it offers fruit concentration and a fine spiciness. We find in particular the aromas of ground clove, white pepper, liquorice, a touch of chocolate with mint, slightly sweet floral notes (peony, iris, lily), as well as notes of ripe fruit (wild strawberry), fresh raspberry, wild blackberry, blackcurrant, blueberry, red cherry juice, morello cherry). The palate is straight, chiseled and tangy. It first expresses notes of black olive (or even tapenade), fresh basil, dried mint, associated in the mid-palate with tangy notes of cranberries, bigarreau cherry, fresh raspberry and blueberry, with a floral (lily, iris) and spicy (white pepper, licorice) touches in the background. The finish is rather persistent, with bitter notes of bergamot and cranberries and a lively acidity. The tannins are tight, slightly bitter. An incisive, straight wine, with juiciness and freshness.
