The wine remains on its lees for 1-3 months, second fermentation is done with the Charmat method for 2 months) The wine has a pale lemon yellow color. The nose expresses fragrant and gourmand notes of fresh grapes, white currants, yellow peach, apricot, peach in syrup, combined with tangy touches of green apple, fresh quince and lemon. We also find notes of white flowers (acacia, apple blossom, honeysuckle), as well as a delicate saline and limestone minerality. On the palate, the wine is silky and savoury. The attack offers gourmet flavors of ripe stone fruits (apricot, white peach), brioche and sweet white currants, refreshed by notes of green apple, fresh lemon zest, candied lemon peel, a touch grapefruit and fresh pineapple, as well as a fine floral bouquet (acacia, honeysuckle). The finish is sapid, quite persistent and expresses a lively lemony acidity, a saline and limestone mineral framework and a hint of fresh almond. The foam is ample and intense. A fresh, expressive and pleasant Prosecco.
