The saké is transparent with some silver reflects. The nose is intense with some complex aromas of fruits (pineapple, apple) but also some spices (anis seed), rice pudding and even a salty sea breeze note. The attack is slightly fizzy. The mouth is very well balanced with pronounced aromas: it’s an explosion of pineapple, cooked rice, peach, lime fruits, chestnut and also mint. It’s very complex, powerful and the fat texture is amazing. You have waves of aromas and textures coming: from sweetness to slight acidity, a hint of bitterness to finally beautiful umami. The finish is very long with some saltiness. It’s a big saké.
