(organic) The cava has a pale salmon color. The nose is juicy, gourmand, and slightly sweet. It expresses notes of ripe raspberry, wild strawberry, red cherry, and red currant, combined with a lactic touch of cherry yogurt, a slightly sweet scent of peony, as well as white pepper, pink grapefruit, blood orange, brioche dough, and yeast in the background. The palate is open, savory, and gourmand. The attack is tangy and lively, with flavors of raspberry, crisp strawberry, and cranberry, complemented by notes of red cherry, pink grapefruit, peony, cherry yogurt, and white pepper in the background. The mousse is fine and enveloping. Good persistence on tangy red fruits (cranberries, raspberry) and a salivating acidity.
