It opens with gourmand notes of ripe stone fruit (yellow peach, apricot), crushed blood orange and orange zest, candied lemon, combined with a hint of vanilla, linden, chamomile infusion, acacia, as well as wax and honey, plus a lactic touch of lemon yogurt. After aeration, we also find a nuance of autolysis (brioche dough, fresh hazelnut), a tangy frame of green apple and green plum, as well as a bitter touch of grapefruit. The palate is sapid, with complexity and tension, but with a rather reserved attack. It first expresses the flavors of lemon zest, orange zest, green apple and tangy apricot, then combined with an autolytic touch (yeast, brioche dough, fresh hazelnut), a floral bouquet (linden, acacia, chamomile infusion). The finish is persistent, tangy, with a good grapefruit bitterness, as well as a touch of hay and a fine lactic touch. The mousse is fine, quite persistent. A fresh, chiseled cava, with a certain complexity.
