The foam is persistent with fine bubbles. The color of this champagne is light straw yellow. The nose is fresh and fruity with apple in different textures: apple juice, cooked apple, crunchy apple and apple blossoms. We also have a hint of pear with the freshness of menthol and white pepper. It’s delicate and understated with a clean minerality. The palate is fine on green pear, fresh walnut and plum. There is a nice acidity, the whole is very fine, delicate and elegant. There is a little salinity and the final, subtle, is on the almond and the cherry stone.
