Antonio Mascaró Pure Brut Nature Guarda Superior 2021 – Cava Reserva

The wine has a pale lemon yellow color. The nose is expressive, with a pronounced autolytic character (toasted bread, fresh dough, toasted yeast), complemented by notes of dried fruits (dried almond, a touch of cashew nuts), dried flowers and hay. In the fruits, we find notes of dried yellow apple, dried yellow lemon, quince, white peach and apricot. Aeration also reveals aromas of honey, wax and citrus jam. The palate is savory, with a tangy attack, on notes of fresh and dried citrus fruits (fresh yellow lemon, grapefruit, dried yellow lemon), which develop into notes of hay, brewed tea, dried white flowers, dried yellow apple and quince. Towards the end of the palate, the wine expresses distinct autolytic notes (yeast, toasted bread, bread dough), as well as dried almond, hay and nutmeg. Good persistence with sharp acidity, notes of lime and green apple, as well as a touch of yeast and a good grapefruit bitterness. The bubbles are medium in size and moderately persistent.
