Cave des Onze Communes is one of the most performant cooperatives in the entires Valle d’Aosta region, northwest of Italy. Founded in the 1990s, it has undertaken a path of continuous growth and improvement, reaching an impressive production of around 500,000 bottles annually, a remarkable volume for the region.
The 160 associated companies cultivate a total of 63 hectares of vineyards, spread across eleven municipalities at various altitudes, between 550 and 850 meters above sea level. This consortium produces a range of high-quality wines, among which the Petite Arvine stands out, an indigenous grape variety that is vinified and aged through a unique process.
The “Onze Communes Petite Arvine” ages for ten months in granite vats from Mont Blanc, followed by a year of bottle aging in the former magnetite mines of Cogne, located over 2000 meters above sea level. These mines, with a constant temperature of 6°C, provide an ideal environment for wine maturation.
The result is a wine with unique characteristics: soft, full-bodied, with citrus notes ranging from cedar to smoky tones. Its persistence on the palate tells the story of the long and special aging process, with mineral sensations that evoke the rock and natural environment where the wine was produced. Such a very impressive sensory experience due to aromas of ripe yellow fruit which get along well with hints of wet stone and slightly toasted notes with aeration. A very persistent and enveloping taste, charismatic enough to be a companion throughout the meal, even with more elaborate and flavorful dishes, as is fitting for the cuisine of the Aosta Valley.
