Santo Roots Huile d’Olive Extra Vierge Riche en Antioxidants (Santorini, Grèce)

 

The oil has a beautiful, deep golden color with slight orange highlights. The nose is precise and intense, textured and well-balanced. Initially, we smell the aromas of fleshy beefsteak tomato and ripe, delicately tangy green zebra, then complemented by notes of fresh zucchini, roasted zucchini and grilled eggplant, as well as fresh hazelnut, toasted almond, fresh green olive, roasted bouquet garni and fresh bay leaf. The palate is powerful, enveloping and rich, with a beautiful airy roundness and a tangy hint of green tomato and tomato leaf that balances its concentration. Then we find the notes of roasted vegetables (roasted zucchini, grilled eggplant, roasted tomato with Mediterranean herbs), as well as a hint of marinated artichoke. The oil is very persistent in the mouth, with notes of toasted hazelnut (even a hint of roasting) and toasted bitter almond, which add a good bitterness to the finish.
