Oro del Desierto, Extra Virgin Olive Oil – Almeria (Spain)

(Organic, 2025/26 harvest) The oil has an intense golden color. The nose offers freshness and vegetal aromas (sautéed zucchini, pan-fried eggplant in the background) and ripe tomato notes (meaty beefsteak tomato, yellow tomato, a hint of roasted tomato), alongside dried fruit (toasted hazelnut, toasted almond in the background) and a light floral and herbaceous touch, complemented by a hint of fennel and coriander seeds. The palate opens with distinct bitterness reminiscent of almond and artichoke (or even endive), followed by notes of grilled eggplant and pan-fried zucchini. There are also notes of hay and dried chamomile, toasted hazelnut, and a hint of black olive and tomato. Good persistence on the palate, featuring notes of toasted coriander seeds and a pronounced bitterness of toasted almond, along with a slight spicy touch.
