Óleo Olivia, Extra Virgin Olive Oil – Extremadura (Spain)

(100% Manzanilla cacereña, harvest season 25/26) The oil has a bright golden color, with slight greenish reflections. It is very aromatic, with lively herbaceous and vegetal notes appearing first: fresh zucchini, fresh artichoke, green olive, fresh rosemary, as well as tomato leaf, Green Zebra tomato and fresh almond. The palate has a pleasant supple and airy texture, a delicate and toasted and bitter attack (there are particularly the flavors of toasted hazelnut and toasted almond). In the mid-palate, we find the flavors of fresh zucchini and artichoke, but complemented by a roasted nuance (roasted zucchini, roasted red tomato), marinated green olive and a hint of pepper. The finish is persistent, delicately toasted, peppery and bitter. A touch of toasted hazelnut and particularly precise on the persistence. A very pleasant olive oil.
