Kleanthi, Early Harvest Extra Virgin Olive Oil – Skalani, Heraclion, Crète (Greece)

(100% Koroneiki, 25/26 harvest) The oil has an intense golden color. The nose is delicately fragrant and elegant, yet enveloping. Initial aromas are floral—even slightly sweet (with hints of white flowers and acacia)—followed by notes of fresh and cooked vegetables (as an undertone): fresh zucchini, roasted eggplant, and sautéed zucchini with herbs, along with touches of toasted hazelnut, almond, ripe green olive, marinated artichoke, and fleshy tomatoes (beefsteak tomato, yellow tomato). There is also a very subtle hint of stone fruit. On the palate, it opens with herbaceous and dried fruit notes (hay, toasted almond, a touch of pecan), followed by a delicate bitterness and a peppery note that intensify slightly through the mid-palate and finish. Flavors of pan-seared zucchini, grilled eggplant, artichoke, and ripe tomatoes (beefsteak tomato, a hint of marinated tomato) also come through. The texture is silky and pleasant, with good length characterized by toasted notes and a slight bitterness.
