The oil has a brilliant, intense lemon color with golden highlights. The nose is fresh, delicate, and even slightly floral. It reveals notes of fresh and fried vegetables with herbs (fresh eggplant, zucchini fried with herbs), meaty beefsteak tomato and roasted red tomato, along with hints of olive blossom, fresh olive, fresh almond, and oil-marinated artichoke in the background. The texture on the palate is supple and silky; the flavors are mild and delicate, with a slight bitterness developing mid-palate. Notes of roasted hazelnut, toasted almond, dried rosemary, roasted tomato, and slightly bitter grilled eggplant emerge, alongside marinated artichoke and roasted tomato. Excellent balance and persistence on the palate.
