(100% Manzanilla Cacereña, 25/26 harvest) The oil has a brilliant golden hue with subtle greenish highlights. The nose is fragrant, offering elegant, refreshing herbaceous notes of mint, olive leaf, fresh rosemary, and cut thyme. Aromas of Green Zebra tomato, vine-ripened tomato (and even tomato leaf), green olive, and freshly cut zucchini follow, accompanied by a hint of fresh almond. On the palate, the texture is rich yet supple—never heavy—with a slightly toasty opening. Notes of ripe red tomato, ripe green olive, cut zucchini, and fresh and dried herbs (dried thyme, cut rosemary, dried bay leaf) emerge next. From the mid-palate onwards, peppery and toasted bitter almond notes develop and intensify. The finish is persistent, peppery, and reminiscent of roasted flavors (roasted zucchini) and toast. A flavorful and expressive olive oil.
