On the palate, it opens with a slight bitterness of artichoke and almond, which intensifies mid-palate and takes on a peppery character. It is followed by flavors of grilled eggplant, a hint of sautéed zucchini and marinated artichoke, roasted tomatoes, and dried aromatic herbs (bay leaf, dried rosemary). The oil has good persistence, featuring notes of toasted hazelnut and toasted almond, along with a pronounced peppery flavor.
