(100% Picholine, 2025/2026 harvest) The oil has a yellow color with greenish highlights. The nose is fragrant and offers freshness and notes of ripe vegetables: green zucchini, beefsteak tomato, and pineapple tomato. There is also a touch of fresh artichoke, fresh herbs (thyme, sage, bay leaf), a hint of fresh and toasted hazelnut, sweet almond, as well as a floral and hay note. The palate has a bitter and spicy attack: with the bitterness of artichoke, toasted bitter almond, and black pepper. Then appear the flavors of pan-fried zucchini, beefsteak tomato, and pineapple tomato, followed by toasted notes and dried herbs (dried thyme, dried rosemary). The bitterness of toasted almond lingers throughout the tasting, softened by hints of roasted vegetables and toasted hazelnut. An expressive oil with a pronounced, yet well-rounded, bitterness.
