Domaine Adonis, Koroneiki, Extra Virgin olive oil Ultra-Premium, First Cold Extraction – Béja (Tunisia)

(100% Koroneiki, 2025/2026 harvest) The oil has a deep golden color. The nose is textured and toasty, with distinct notes of dried and roasted nuts (roasted hazelnut, roasted almond). They are followed by aromas of vegetables (zucchini, eggplant) fried  with Provence herbs, crushed beefsteak tomato, and roasted thyme and rosemary, along with a touch of toasted sunflower seeds. There is also light, fruity, and sweet notes of orange and peach. The palate is expressive and flavorful, with an initial burst of toasty notes (toasted hazelnut, toasted bitter almond), followed by a bitterness reminiscent of white asparagus and artichoke. The bitterness gradually fades, developing a toasty and roasted character (toasted hazelnut, roasted eggplant, roasted zucchini). The finish is very persistent, still featuring toasted dried fruit with a touch of candied tomato and a hint of pepper. Beautiful complexity with different and pronounced bitter notes.
