Fresh, herbaceous notes then emerge (bay leaf, olive leaf, thyme, basil in the background, a hint of rosemary), followed by notes of dried fruit (dried hazelnut, cashew nut, a touch of almond) and vegetables (sautéed zucchini, roasted eggplant), marinated artichoke, and ripe juicy tomatoes (beefsteak, yellow pineapple tomato). The flavors are enveloping, toasty on the attack (toasted hazelnut, toasted cashew nut), with a touch of bitterness from toasted almond. The flavors of herbs (roasted thyme, bay leaf, dried rosemary and basil), herb-roasted zucchini, and roasted tomatoes (beefsteak, pineapple tomato) then reappear. The finish is savory, intense, and peppery. An expressive oil, with lots of flavor and a silky, pleasant texture.
